Cilantro Lime Pasta Salad


For the salad:

3-4 zucchini, peeled

½ red pepper, chopped

1 cup cherry tomatoes, cut in half

½ avocado, cut into cubes

¼ cup red or green onion, chopped

1 mango, cut into cubes


Creamy Cilantro Lime Dressing:

3 tbsp hemp seeds or raw cashews soaked overnight ·2 small limes, juiced

1 zucchini, peeled and chopped

1 bunch of fresh cilantro

1 ½ cups chopped mango

1 green onion

1 medjool date

½ tsp cumin


jalapeno pepper to taste



1. Make pasta noodles by using the straight blade on your spiralizer. Place in large bowl. You can also make the noodles by using a vegetable peeler or mandolin. 

2. Toss in remaining salad ingredients.

3. Make the dressing: Place all ingredients (except cilantro) in a high-speed blender or food processor and blend until smooth. Add cilantro and pulse blend into the dressing. 

4. Pour dressing on top of salad and mix together coating all of the veggies. Refrigerate until time to serve.
