Waldorf Salad


For the salad:

1 head of broccoli, chopped (3-4 cups) 

1 cup sliced celery 

1 cup of red/purple grapes, cut in half

1/2 cup walnut pieces 


1 large avocado

1 small zucchini, peeled and chopped

1 tbsp mustard/dijon 

2 tbsp fresh lemon juice 

1 medjool date, pitted 

Handful of fresh parsley 



1. Mix the broccoli, grapes, celery in a medium sized bowl. Set aside 

2. Make the dressing: Place all ingredients (except parsley) in a high-speed blender or food processor and blend until smooth. Add parsley and pulse blend into the dressing. 

3. Pour dressing on top of salad and mix together coating all of the veggies. 4. Refrigerate until time to serve. Add walnuts and stir in right before serving. Enjoy!
